TheBanyanTree: Another fruitcake

This sounds very much like a good Irish Xmas cake recipe I used ter
have..yup sherry gives an  exceptionally good flavour ter fruit
cakes..also..after yer has cooked the cake and it has cooled, pour
brandy (or rum) over the top of the cake and seal cake in waxed paper
or similar and place in air tight tin or plastic container and leave
for a month before eating. The brandy keeps the cake moist and also
ferments a bit to produce a very rich and tasty cake.
